How to Read a Vegetable Seed Packet
Interpret maturity starting points, harvest stages, germination, depth, spacing, treatment, lot, and regional wording before planning dates.

Before putting a packet number on a calendar, identify two things: where the maturity count starts and what harvest stage ends it. A direct-sown crop may be labeled from seed to harvest. A transplanted crop may be labeled from transplant to harvest, which leaves the indoor seedling period outside that number.
Copy the exact variety’s germination range, sowing depth, thinning or final spacing, and maturity wording. Keep the packet or catalog entry with your notes because those details can differ among varieties of the same vegetable.
Find where the maturity count begins
Oregon State University Extension publishes separate planning tables for vegetables grown from seed and vegetables grown from transplants. The first labels maturity from seed to harvest; the second labels it from transplant to harvest and lists transplant age separately. That distinction prevents two common errors:
- For a direct-sown crop, do not add germination days again when the packet already counts from sowing.
- For a transplant-based number, do not pretend the indoor seedling period is included. Add that earlier period only when calculating when to sow indoors.
If the packet says only “70 days” and does not name a starting point, check the supplier’s variety page or contact the supplier instead of guessing. The crop’s usual planting method can suggest a question to ask, but it does not rewrite the label.
Check what “mature” means
The endpoint may be baby, green, full-size, or fully ripe produce. Extension planning tables show why the endpoint matters: baby carrots can be ready before full-size carrots, leafy crops may allow repeated cuts, and a pepper or tomato can have a different useful endpoint depending on whether the gardener wants green or fully colored fruit.
Treat the number as a variety-comparison and planning value, not a harvest appointment. Oregon State’s vegetable degree-day research found that generic calendar-day predictions can shift substantially with planting date and season. Temperature, light, moisture, crop competition, pests, and production method can all change development.
Put the number on a calendar
These examples show the arithmetic, not promised harvest dates:
- Direct-sown example: A hypothetical carrot packet says 70 days from sowing to a full-size root. A June 1 sowing gives an August 10 planning date. Germination time is already inside the 70-day count.
- Transplanted example: A hypothetical tomato packet says 70 days from transplant to its stated harvest stage. A May 20 transplant gives a July 29 planning date. If you need an indoor sowing date, count the packet’s separate seedling lead time backward from May 20; do not start the 70-day maturity clock on the indoor sowing date.
For fall crops, use the more complete fall vegetable garden planning method, which works backward from a local freeze reference and labels any allowance for slower late-season growth. The carrot profile and tomato profile add crop-specific planting context without replacing the selected variety’s packet.
Keep climate signals and bed checks separate
USDA Hardiness Zone does not define the maturity count; it summarizes average annual extreme minimum temperatures for perennial hardiness. A NOAA freeze normal is not a forecast, but it can provide a probability reference for the available season. Near a vulnerable date, use a current short-range weather forecast for an actual cold or heat event.
Soil temperature and local bed conditions affect germination and establishment. They do not change where the packet says to start counting, and the packet cannot see moisture, shade, wind exposure, disease, or pest pressure in your garden. Read the rest of the packet
Depth, spacing, row or hill wording, germination test date, lot number, seed count or weight, treatment, and variety name answer different questions. The seed quantity calculator returns an individual-seed estimate; it does not assume one universal packet size. “Full sun” describes light exposure, not heat tolerance, and regional calendar wording still needs conversion to local conditions.

Limits
Seed companies can define maturity wording differently, and a packet number cannot predict the exact harvest date in every climate or garden. Follow the exact label for the selected variety, record the real sowing, transplanting, and first-harvest dates, and use those observations to improve next season’s plan.
